It looks to me like he does it because he likes straight skulls or something like that. And since it worked, why not keep on doing it?.
On straight skulls' effective range, Soul steal is as useful, covers also air, gives pushback and only takes 3 more frames to perform.
Or maybe he didn't feel as comfortable when morphed as Smoke.

I came up with a nice little juggle. There are two good reasons to do it:
1 - gives you a better range
2 - it gives less risk of getting AA'ed by pokes.
I havent seen anyone doing it in real matches, but it works for me xD.
