For me, I'd say Mortal Kombat (2011) simply for reviving the franchise after the sad, sad 3D era. The nostalgia with it, and the way it captured the spirit of the franchise were fantastic.
I'd say Mortal Kombat XL next because it's an excellent, modern fighter for the franchise with excellent, underrated balance. I didn't approve of all the design decisions with it (offensive/50-50 dominance, return of Running), but it's still a fantastic game.
Mortal Kombat II is the single best classic game in my opinion. The best roster, environments, story, and tone. Oh my.
Mortal Kombat (1992) started it all, and was a complete blast for its day.
Ultimate Mortal Kombat 3 was a nice upgrade to Mortal Kombat 3 and brought back a lot of fan favourite characters. Always hated the Run mechanic though.
All the 3D games, except for Mortal Kombat: Deception, are no. Mortal Kombat: Deception is simply okay, in my opinion.
