Tips on not getting poked out of strings?

Title. I keep inputting a string, only for it to be stopped on startup or somehow interrupted in the middle of it.
Go to the lab, set AI to reversal always and test the string and special cancels you are using. If it's gapless the AI should only reversal at the end of your string/special. In which case, you should be using safe strings/specials to avoid getting punished. Once your opponent(human player, online) blocks it, respect his/hers next option and look at what he is doing. If you notice a pattern, punish accordingly. If you know he is poking everytime, do an armored move, block poke back, backdash, jump back(doesn't work against everyone). Might be missing some stuff but I just gave you some pretty good tips

You're doing something wrong. As far as I know there is no string in this game can be interrupted by just poking.
If you got interrupted before you land the 1st hit of the string, you're probably using a high move, which is not supposed to hit crouching opponents. If they press down 3, down 4 they are doing a crouching attack that's why they can poke you under your high moves.
If #2 and my post are not the answer you're looking for, tell us more specifically in what situations you get poked in the middle of a string?

Lol maybe not strings but special cancels definitely and I think that is what he is referring to.

Are you sure you do, for example, Kitana's 11 xx fan correctly. You may mess it up into 11, stop then throw a raw fan.
There are actually a lot of strings cancelled into specials having a hugh gap before the special moves come out, for example Liu Kang wp punch into dragon roar, but most of the casts don't have such strings

Of course. Not all special cancels but a handful, in fact pretty much the entire cast has a slow special that never jails into strings.

So can you please tell us what characters or what strings you used that got poked out? I'm trying to help and I tell you what I know

If it's on startup then the first hit is either too slow (Mileena's F3 can be full combo punished on reaction lol) or the first hit is a high. High attacks can be ducked and pocks leave you in a ducking state so the high just goes over their head.

Some strings ending in special can be poked in between the end of string and before the special starts up

Kung Lao has his B321 string that I try to do all the time, but it seems like I can get interrupted after either his first or second hit.
Liu Kang has an overhead string, 113, but I can never land the last kick.
Kung Lao has his 11212 string, but I can't seem to land the flurry of punches sometimes because I get interrupted.

Most standing 1s are high, they won't hit crouching bodies. B321 does have a gap between the 2nd and the 3rd hit that can be armored through

The 11 string has three string options- 111, 112, & 113. You can also special cancel straight off the 11, or any of the string options.

Have you had your MK today?
Just have to look at the frame data, mainly startup and cancel values. Try using the fastest starters, and when doing strings look for high cancel values. Then go to your fastest specials to link them in.

Aside from that, it's just getting used to the timings of a given character's inputs and buffing specials correctly during strings. Each fighter can have their own rhythm.
