Knee hop works great after a few crouching jab block strings, when you condition them to block. Assuming they aren't jumping (use roundhouse after the jabs) or mashing buttons (SPD to grab limbs). You'll get the hang of it!

I have a follow up to this. That damn Ex headbutt. Good fucking god. It anti-airs, it crushes or avoids low attacks, it's invincible, and it's fast as hell. I loathe it.
Yeah it is, lol. The best I can tell you is let go as soon as the attack you are trying to hit them after connects with you.
Just trying to figure out other ways to hit so I can use the trigger off of it. Also I was having trouble against a Ryu the other day, I flexed the 2 hits on his solar plexus but couldnt walk forward to absorb the hit from the shoryuken cancel since I cannot recover in time to SPD.
I think it is 5-5 but some say Alex beats him. Alex's best bet is to whiff punish and poke Gief until knockdown then go ham.
