I don't think there is a thread about this so I'll post it here. I don't know about XBL or the PC, but on PS3 it is possible to see who you will be playing before you even start the match. Usually when you enter a lobby, it just says "PLAYER 2" and you don't learn who the opponent is until both players hit start. However....
Once you start the search for an opponent, immediately hit the PSN button, scroll over to the far right, and go to "Players Met." If it's a brand new player, their name will magically populate at the top of the list. If it's someone you've played recently, their name will flash for a brief second (but not move to the top of the list.) I could care less who I play, but this is useful because you can tell who has a shitty connection and who just flat out won't hit start because they are either away from the game or (more likely) afraid to play you since they know about this same tactic.
