In what MK games do you enjoy the gameplay in? They can still be fun to play, no matter how broken they are, depending on what you like.
For me:
Mortal Kombat Deadly Alliance
MKDA was one of the few non-broken MK games out there, not only is a balanced decently, but it made 3D gameplay unlike any other fighting game, with multiple fighting styles, each one with a special move that was either useless or improved the character. MKD's true gameplay only revolved around glitches while MKDA barely had any that were usable in gameplay.
The game is a mix of offense and defense strategy's depending on the character, which is why the top tier characters are top, because you can't really get close to them without being punished.
The parry system (called reverse in this one) is much more realistic in this one, and seems a little harder to pull off, mostly with the timing. You cannot do reverses to weapons, though most of the weapons are pretty useless anyway. The bad thing about reverses was, that only a few characters had it, but I did not care, I like beating my opponent helplessly.

Ultimate Mortal Kombat 3:
Another balanced MK game, offering plenty of competition, it even has a whole site dedicated to it ( ultimatemk.com which also has other MK games but mainly focuses on UMK3)
The gameplay is much improved over MK2, while you cannot be hit while blocking and holding back, you could do some decent block damage with run-jabs, JK's, and some mix ups, that is what made it leap from the turtle-fest known as MK2.
The 100% combo's in this game are very hard to pull off and you must get your enemy to make a mistake and get hit by it, its pretty rare that you see many 100% combo's in tournaments unless you count kung lao, but even he can take some practice unlike the newer MK games where you could just throw them out like they are nothing.
Overall, the game is pretty solid, gameplay wise, just about perfect balance of characters, combos actually take skill, and is treated nice in todays competition

-simplistic, downgraded gameplay compared to most fighters
However, like I said before, these can still be fun depending on what you like in a MK game.
