Don't ever jump. Kano can punish jumpers like nobody's business. The only exception is if the ever tries to x-ray you. If he uses X-Ray you should be able to hold Forward-Up when the animation starts. His X-ray whiffs on airborne opponents and Forward-Up will allow you to avoid the x-ray and punish Kano with the kombo of your choice. Those are really the only generic tips I can give you.
