Why do Edenians and Outworlders look human?

Why do edenians like Kitana, Jade, Tanya, Sindel and Rain along with Outworlders like Bo Rai Cho, Li Mei and Reiko look human? Were Edenians and Outworlders evolved from humans?

Edenians were probably created by the Elder Gods as a more refined version of regular Earthrealm humans, though (as far as I know) we were never given any answer for why. It is probably playing on the concept of "humans before the original sin", something like the Elves from Tolkien - a form of life very similar to regular folk, but "perfected" in other aspects (like longer lifespan, more athletic bodies and martial prowess and some sort of desirable "beauty traits" being natural to them).

Outworlders are even more of a mystery. Some of them, like Bo' Rai Cho, are seemingly human but possess the long lifespan of Edenians, despite not being Edenian themselves (I don't remember if Li Mei is ever described as being very old despite looking young). Some Earthrealmers, like Sub-zero in the Midway timeline, actually descend from Outworld cryomancers.

Another fun fact: the Saurians, from which Reptile is descended from, are actually Earthrealmers, despite obviously not being humans. When Earthrealm was ravaged in a war between Shinnok and the Elder Gods, the Saurians founded a new home (Zaterra) which was then merged with Outworld. So in a way, Reptile's family is more Earthrealmer than Sub-Zero's lol

EDIT: To answer your question - perhaps Edenians, Outworlders and Earthrealmers (the ones who look human) were all made from the same "base model" by the Elder Gods and given different "stats" for a number of undisclosed reasons.

but also, are realms planets? Are they universes? Did scorpion and bi Han feud in feudal Japan? Or was it present day? Is/was bi Han immortal? Since there is a neatherrealm, is there a heaven? Why does no one go to it? This stuff has always been unclear to me.

It's an expensive universe. Why do Kryptonians look human? Why do Viltrumites look human? Vaeternians look human too and they're on a completely separate planet as well AND vampires. Engineers from the Alien series look like humans too, really. Just big albino ones. In an expensive universe of any sort especially where the subject of creation/a creator(s) is at play, it would almost be unrealistic and illogical to rule out species that don't look similar to humans or any other species for that matter in an expensive universe. Especially one that dabbles interdimentionally as well as confirmed parallel timeliness and universes. It's not just with humans. Krypto the Superdog looks like a dog from Earth, but he's Kryptonian. Goose, the alien cat from the Marvel comics looks like a cat from earth, buts a whole ass alien. It's not even a cat at all but he looks like one. His entire species does. So put your brain at ease on this one. Not much more to look into. A creator will create different versions of the same things for several different reasons. Whether someone is designing an engine, an artist making a painting, a chef making a dish. See what I'm getting at? Edenians could be human for all we know but the planet they got placed on made them stronger and have more longevity akin to Saiyans from Planet Vegeta. Who also look like humans...

Even if a creator(s) wasn't at play (which it is, Liu Kang is this entire timeline's creator) it's also illogical to rule out similar-looking species in an infinite universe. The odds are 0 that we (speaking about in the game, real life too if you want something to think about) are unique. It's literally scientifically and mathematically impossible. In that case a creator(s) would all but be confirmed because we would be a singularity and a literal miracle.

Realms are their own planets in mortal Kombat universe as we see in Mortal Kombat Legends Battle Of Realms the realms in the shape of planets merging.

Lore wise, Edeninans are decendants of elder gods, Gods and Demigods, outworlders are asians, the lore always stated that earthrealmers life span is shorter, but their technologies advance faster than any other realm who life span last longer but they tech barely advances, and are more reliable in Magic, other forms of magic.
The only humans who have some sort of magic in the lore are Shaolin monks who can manipulate the 5 elements with lot's of training:
Liu is fire, Lao is wind, Kai it's also fire, Kung Jin it's also wind.
there are also 4 guardians who used to protect earthrealm from outside forces
Raiden - Also known as the god of Thunder and the main protector of earthrealm
Fujin - The wind god also the gate keeper of the earth temple, and Raiden's Brother
Dojin - Also known as Earth God, in the mythologies he appears as an earth Golem, but that can be just one of his main abilities, he is the guardian of the water temple
Sujin - The Water god, a shape shifter and the guardian of the final key to the fire temple
Kajin - Also known as the fire god (In angola this one is called Raiden's Cousin) he is the guardian of the Shinnok's Amulet and has to stay in the chamber at all times, dude has a flame state where he becomes impermeable to anything, and can't be damaged by projectiles, sub-zero can't freeze him in that state as well.
Kajin got defeated and imprisioned for his defeat, when Scorpion became the champion of the elder gods, Kajin got sealed into a Ninja Sword, which then was given to scorpion after in order to beat onaga, the sword name became Mugai Ryu.
