Is there any way to find out how to unlock secret brutalities

I didn't think it need a definition a brutality that can be done but is not listed in the brutalities

I don't think there are any. If you've seen any on YT that aren't available to unlock yet is because they either got AI to do them or they unlocked them with unlocker on PC. If you mean alternative animations like Scorpion pulling opponent's head off instead of their heart or Shang transforming into different ninjas at the end, those have different input like holding another button or something like that which we have to figure out ourselves.

Pretty much all are tower locked except the ones you get in Kombat League. There are some you can get in The Krypt but you can unlock those in towers as well by beating boss towers on brutal difficulty.

Over at Mortal Kombat wiki, each character has a page that lists all their finishers from the games that they were in. If you look at their list of brutalities and you see one that says secret next to it, but doesn't have any requirements listed on how to perform them, then it's likely that's a brutality that only the AI can do currently.

Well there are no character specific unlisted brutalities secret from the move list.

There are, however, brutalities with alternate animations that you can see with secret inputs.

Theres 11 on average per character. You start off with 2. Unlock another 3-4 from the first 5 levels of their character towers. Then you unlock more by beating brutal difficulty towers with that character.

Furthermore, some characters have holiday brutalities or Kombat League brutalities.
