Alright, I started fighters not too long ago, maybe a month, and I'm getting to the point where I want to learn kombos.

I'm finding it nearly impossible to remember/get the combo down, even after I separate it into segments and learn a segment at a time.

A simple thing to others like b321 - EXSpecial - Run - b21 (special) is proving IMPOSSIBLE for me.

Is there any tips on timing/remembering kombos?
Will it get easier?

I feel like there's no way I could ever pull off a long kombo in an actual match, as I would not be able to remember/think it all through that quickly.

it will get easier, practice makes perfect, youve been playing fighters for 1 month, so i dont think you have the execution / memory for combos as people playing FGs for 5+ years.

just work at it and soon they will just be muscle memory you wont even need to think.

I had the same experience with MK9, I was new to fighting games like yourself & when I seen a Cyrax combo tutorial, I just said 'fuck that' due to the many button presses & directional inputs, I just stuck with it & eventually I was doing 50% bnb's, then 75% bnb's, after I did those & realised that most of the time the combo wasn't coming out, it was due to me being nervous & either hitting the buttons to fast or to slow. My advice is to take your time & find out were you're stuck, is, if its the ex special into run 21, then just practise that until it becomes 2nd nature.

Believe me, once you hit your 1st big awkward looking combo, then the flood gates open & you'll start hitting all sorts of combos with the entire cast, that's how it was with myself anyway & I'm no games master.

Would you say it's better to practice going in one direction over and over and over again until you have it nailed, then go to the other direction? Or is it better to do them back and fourth? Like 4 times in this direction, then 4 times in the other direction, and so on?

Practice makes perfect. I will go into training and do a specific combo several times from each side until I start nailing them a certain amount of times. Then I move on to the next combo.

Do as you see fit. It's important to make your brain get used to think in "back+2, run" rather than "left+2, right-right+blk", for example. It's not just combos either, you want not to get wrong normals due to directional inputs as well.
Try to mix some actual gameplay into training sessions for that, even bots will probably work. Other than that it's mostly about what people call "muscle memory".
