But to answer, maybe they thought it would be overdoing it on the K instead of C thing to make Johnny Cage, Johnny Kage. I personally think its cheesy how they replace pretty much every C with a K.
You know, its funny. I went to wiki and I actually found out that "Kage" in Chinese or Japanese means shadow. Its such a huge concidence. But I dont think it looks better with the K. I hope hes in MK8....

If you played Virtua Fighter, there's a ninja named Kage-maru, but is referred to as Kage [sound it out (Kah - GaY)-and probably set myself up for that] and most newbs called him Kage (Cage) straight up because they lacked Japanese pronunctiation.
