A couple of things, first of all, you should always block against Johnny Cage after a nut punch for more of general advice. You did a good job with Jax's combos and gotcha grabs. What I would suggest is using f4,1,3 a lot as blackjames said and try dash blocking which is dashing forward and pressing block to move forward quicker. The last thing I would suggest is pressing back after landing and enhanced dash punch so that you can pressure better and making sure to keep him in the corner with your throws. Hope this helps.
