There are a lot of brilliant movie soundtracks out there, and great composers as well. But my most favourite ones are those written by a brilliant, brilliant man named Clint Mansell.
Anything by Clint Mansell is pretty much guaranteed to be a masterpiece. Here are some of my favourites:
The Fountain: If you haven't seen this movie, go watch it NOW. It will blow your mind. Also has easily one of the top 5 soundtracks of all time.
Black Swan: This soundtrack is based mostly on Tchaikovsky's Swan Lake. It is absolutely amazing.
Dead Reckoning (from "Smokin' Aces" soundtrack): An utterly brilliant track from a really good movie.
