This is just something that I'm attempting for my own purposes, but I thought I might as well post it up in case it benefits anyone else. Please feel free to fill out your character, as a newbie I'm generally going to take more experienced advice over my own. I will also credit the contributer.

Difficulty: How hard the character is to play (subjective) Very Easy, Easy, Medium, Hard, Very Hard
Tournament Frequency: How often this character appeared in high level tournaments, Never, Rare, Sometimes, Common, Always
General: The general playstyle the character was designed to perform: Balanced, Rushdown, Mix-up, Zoning
Var1-3: How the variation modifies the general gameplan.

SpecOps:Adds Air Assualt Special for added spacial control and corner pressure.

D’Vorah

Swarm Queen: Changes Projectile to Wasp grenade, and changes Spawning Pool to Vortex Swarm which can start or extend combos.
Brood Mother: Grants cancellable Bug Blast Projectile and Krawler Projectile.
Venomous: Adds Damage Over time to stinger attacks.

Ermac
Difficulty:

General: Mix-up, Zoning
Mystic: Tele-Hang creates more meterless combo opportunity.
Master of Souls: There is a lot going on here, but the focal point is that Ermac has vortex set ups in this variation.
Spectral: Grants a superman-like fly move and the ability to use basic attacks during hover.

Erron Black

Gunslinger: Adds Stand off stances and special projectiles from that variation.
Outlaw: Adds tools that create more damaging combos.
Marksman: Zoning-Oriented Varient with Rifle attacks.

Ferra/Torr

Vicious: Adds the Boss-Toss straight firing, high damage projectile attack.
Ruthless: Adds Damage Buff, and cancel pressure.
Lackey: Removes Ferra, changing normals and most special moves.

Goro

Kuatan Warrior: Grants Chest Toss and Quake specials.
Tigrar Fury: Grants Fire oriented projectiles.

Difficulty: Medium (Full Auto), Hard (Shotgun), Very Hard (High Tech)

Full Auto: Adds Machine gun and rocket launcher for Zoning options.
Shotgun: Adds Shotgun attacks for maintaining advantage and creating vortexs.
High Tech: Adds damage buffs and cancelable attacks to enhance close up pressure.

Relentless: Grants Teleport, Damage buff when under 33% life, and the Pursuit special move which disorients the opponent.

Heavy Weapons: Zoning oriented variation granting Machine gun and Rocket Launcher Attacks
Wrestler: Pressures with advantage on blocked projectiles, adds quad toss, and grabs to some chains.
Pumped Up: Super Gotcha Grab, and full screen rather than location specific ground tremor.

Johnny Cage
Difficulty: Easy (Fisticuffs, Stunt Double) Very Hard (A-List)
Tournament Frequency:
General: Rushdown
Fisticuffs: Grants Speedbag combo and damage buff. Focuses on block pressure and chip damage.
Stunt Double: Grants body double special moves, Fireball now fires in a straight line.
A-List: Adds cancels to certain strings and special moves.
